01 / ABOUT US
ROOTED IN CHITA.
CRAFTED WITH TIME.
Since 1934, MITSUI VINEGAR CO.,LTD. has made vinegar on the Chita Peninsula in Aichi, a region known for its fermentation culture.
From vinegar, our work has grown to seasonings, sauces, soups, dressings, beverages and powdered products. Across everything we make, one belief remains unchanged: truly good flavor cannot be rushed.
02 / OUR ROOTS
SHAPED BY CHITA'S
BREWING CULTURE.
For generations, the Chita Peninsula has been home to makers of sake, miso, soy sauce and vinegar.
Founded in Handa in 1934, we moved our headquarters and production base to Agui in 2000. We continue to make vinegar and a wide range of seasonings here today. Vinegar making remains our foundation, rooted in careful fermentation, respect for the seasons and the patience to let flavor develop naturally.
03 / OUR CRAFT
TIME IS ONE OF OUR MOST
IMPORTANT INGREDIENTS.
For selected vinegars, we continue to use static fermentation, a traditional brewing method.
The initial fermentation takes approximately 40 days, followed by at least three months of maturation. Our brewers monitor each batch and use komo, traditional woven straw mats, to help regulate temperature as the seasons change.
We often compare vinegar making to raising a child: it cannot be rushed. Time and attentive care create rounded acidity, deep flavor and a rich aroma.
04 / OUR EVOLUTION
FROM VINEGAR MAKER TO
FOOD DEVELOPMENT PARTNER.
Our brewing knowledge has opened the way to products far beyond vinegar.
Today, alongside our own products, we provide private-label and contract manufacturing for food manufacturers, distributors and foodservice companies. From formulation and prototypes to packaging and production, we work with customers to turn ideas into viable products.
To us, preserving tradition means using inherited skills to create what comes next.
05 / OUR COMMITMENT
TRADITION,
BACKED BY
MODERN QUALITY.
We preserve the hands-on craftsmanship of traditional vinegar making while continuously improving our production systems and food safety management.
All of our manufacturing facilities are ISO 22000 certified.
Controlled processes and strict quality inspections help us deliver consistent quality and reliable long-term supply.

06 / OUR FUTURE
FROM CHITA TO THE WORLD.
Japanese vinegars and seasonings can create new possibilities for cuisines and food businesses worldwide.
We do not assume one flavor will suit every market. We listen to local tastes, food cultures, ingredient and allergen requirements, and business needs, then apply our expertise to products designed for each market.
Together with chefs, distributors, food manufacturers and brand owners, we want to create the next distinctive flavor.
